terroir

Last Saturday we woke up early and made our way down the street to terroir, a beautiful restaurant, for a cooking class. We entered the restaurant from the alley, directly in to the kitchen. We were greeted by Tim, the owner and chef. Steven and I sat down at the small bar in front of the kitchen and Tim handed us recipes. We were going to make several sauces, and at the end, Tim would grill up some meats and veggies to pair with the sauces. I instantly loved how relaxed Tim was. He moved gracefully around the kitchen and was super patient with us. Before cooking, Tim gave us a bit of history of each sauce. We made romesco, chimichurri, salsa verde, pea coulis, mango chutney and apple chutney. Then Tim grilled salmon, hanger steak, pork medallions, asparagus, and potatoes. We placed everything on a long table covered in white linens and had the best lunch this side of the Mississip.






Tim's wife Melissa joined us at lunch and I admitted that I have had a crush on their restaurant for many months, sneaking peeks inside every nite on my drive home.

The nite before the class, I took this pic. It reminds me of a postcard. Wish it wasn't blurry but I will blame that on the snow that was gently falling.
